Bacon and sweet potatoes in the oven

One dish in the oven: sweet potatoes, onion and bacon dripping down over all of it.

Ingredients

For 4 servings.

  • 200 g bacon
  • 800 g sweet potatoes
  • 2 pcs onion
  • 30 g butter
  • 2 tsp salt
  • 1 tsp pepper

How to make it

  1. Heat the oven to 200 degrees and let it preheat for about 10 minutes.
  2. Cut the sweet potatoes into wedges and the onions into wedges.
  3. Turn the sweet potatoes and onion in the melted butter in a dish and season with salt and pepper.
  4. Lay the bacon rashers across the top, so the fat drips down into the vegetables.
  5. Bake for 35-40 minutes, until the potatoes are tender and the bacon is crisp.
  6. Serve straight from the dish.
