Ingredients

For 4 servings.

  • 500 g minced beef
  • 1 pcs eggs
  • 1 pcs onion
  • 400 g carrots
  • 600 ml bone broth
  • 2 tsp salt
  • 1 tsp pepper

How to make it

  1. Chop the onion finely and cut the carrots into slices.
  2. Stir the mince together with the egg, onion, salt and pepper.
  3. Heat the broth in a pot for 4-5 minutes, until it just simmers.
  4. Shape small balls with two spoons and let them cook in the broth for 8-10 minutes.
  5. Add the carrots and let the soup cook on for 10-12 minutes, until they are tender.
  6. Season the soup with salt and pepper and serve the balls in their own broth.

Why it is easy

  • Can be made in a double batch and frozen or kept
  • Leaves enough for another day
  • Freezes well

Calculated from the ingredients using figures from Frida (the National Food Institute at the Technical University of Denmark), by the same code the app uses. The calories are rounded to the nearest ten, because home cooking lands within about ±30 % — a number with more digits would promise a precision it does not have. No judgement is attached to these figures, and none is coming.
