Salmon with spinach and lemon butter

Salmon fried skin side down, spinach wilted in the pan, and a butter stirred with lemon.

Ingredients

For 4 servings.

  • 400 g salmon
  • 200 g spinach
  • 60 g butter
  • 1 pcs lemon
  • 400 g rice
  • 1000 ml water
  • 1 tsp salt
  • 1 tsp pepper

How to make it

  1. Halve the lemon, squeeze out the juice and stir it together with half the soft butter.
  2. Cook the rice in plenty of water as the packet says, typically 10-12 minutes.
  3. Melt the rest of the butter in a pan and fry the salmon skin side down for 4-5 minutes.
  4. Turn the fish and fry on for 2-3 minutes, until it flakes apart.
  5. Lift out the salmon, put the spinach in the pan and let it wilt for 1-2 minutes.
  6. Season with salt and pepper and put a knob of the lemon butter on the salmon, so it melts.
