Baked salmon with tomato and onion
Salmon baked on a layer of tomato and onion that becomes the sauce along the way.

Ingredients
For 4 servings.
- 400 g salmon
- 4 pcs tomato
- 2 pcs onion
- 400 g rice
- 1 pcs lemon
- 1000 ml water
- 2 tbsp oil
- 1 tsp salt
- 1 tsp pepper
How to make it
- Heat the oven to 200 degrees and let it preheat for about 10 minutes.
- Cut the tomatoes into slices, the onions into thin rings and the lemon into wedges.
- Spread the tomato and onion in a dish, drizzle the oil over and season with salt and pepper.
- Cook the rice in plenty of water as the packet says, typically 10-12 minutes.
- Lay the salmon on top of the vegetables and bake for 16-18 minutes, until the fish flakes apart.
- Serve the salmon with the juices from the dish, the rice and the lemon wedges.
