Egg cake with courgette and onion

A thick baked omelette with courgette and onion fried down in the base first. Dinner for under fifty kroner.

40 minutes in total — 10 minutes of preparation and 30 minutes on the hob or in the oven. Written for 4 servings.

Ingredients

For 4 servings.

  • 8 pcs eggs
  • 400 g courgette
  • 2 pcs onion
  • 40 g butter
  • 1 tsp salt
  • 1 tsp pepper

How to make it

  1. Cut the courgette into half slices and the onions into thin rings.
  2. Whisk the eggs together with salt and pepper.
  3. Melt the butter in a pan and fry the courgette and onion for 8-10 minutes, until soft.
  4. Pour the egg mixture over and let the egg cake set over a low heat for 12-15 minutes, until only the middle is soft.
  5. Cut the egg cake into four pieces and lift them onto the plates.
