Beef meatloaf with cheese

A meatloaf without breadcrumbs. Egg and cheese hold it together, and it can be sliced cold the next day.

60 minutes in total — 15 minutes of preparation and 45 minutes on the hob or in the oven. Written for 4 servings.

gluten-free

Ingredients

For 4 servings.

  • 700 g minced beef
  • 100 g cheese
  • 2 pcs eggs
  • 100 ml cream
  • 1 pcs onion
  • 2 tsp salt
  • 1 tsp pepper

How to make it

  1. Heat the oven to 180 degrees and let it preheat for about 10 minutes.
  2. Grate the cheese and chop the onion finely.
  3. Stir the mince together with the egg, cream, cheese, onion, salt and pepper.
  4. Shape a long loaf in a dish and press it lightly together, so there are no air pockets.
  5. Bake the meatloaf for 40-45 minutes, until the crust is dark.
  6. Let it rest for ten minutes before you cut it into slices.

Why it is easy

  • Can be made in a double batch and frozen or kept
  • Leaves enough for another day
  • Everyday food most people say yes to
  • Freezes well

Calculated from the ingredients using figures from Frida (the National Food Institute at the Technical University of Denmark), by the same code the app uses. The calories are rounded to the nearest ten, because home cooking lands within about ±30 % — a number with more digits would promise a precision it does not have. No judgement is attached to these figures, and none is coming.
