Beef soup on marrow bones

A soup that finishes cooking itself on marrow bones while you do something else.

100 minutes in total — 10 minutes of preparation and 90 minutes on the hob or in the oven. Written for 4 servings.

Ingredients

For 4 servings.

  • 800 g marrow bones
  • 800 ml bone broth
  • 400 g carrots
  • 2 pcs onion
  • 2 tsp salt
  • 1 tsp pepper

How to make it

  1. Cut the carrots into slices and the onion into wedges.
  2. Put the marrow bones in a pot with the broth and let it simmer for 60-70 minutes.
  3. Add the carrots and onion and let the soup simmer on for 20-25 minutes, until the carrots are tender.
  4. Season the soup with salt and pepper.
  5. Scrape the marrow out of the bones into the soup and stir until it has melted.
