Calf's liver in cream

Liver in a mild cream sauce — rounder in flavour than the fried version.

30 minutes in total — 10 minutes of preparation and 20 minutes on the hob or in the oven. Written for 4 servings.

Ingredients

For 4 servings.

  • 500 g calf's liver
  • 250 ml cream
  • 2 pcs onion
  • 30 g butter
  • 1 tsp salt
  • 1 tsp pepper

How to make it

  1. Cut the liver into strips and the onion into thin rings.
  2. Sweat the onion in the butter for 5-6 minutes.
  3. Fry the liver strips along for 2-3 minutes, until they have just lost the red on the outside.
  4. Pour in the cream and let it simmer for 6-8 minutes.
  5. Season the sauce with salt and pepper and serve the liver in it.
