Cauliflower and chickpea curry

A creamy curry with cauliflower and chickpeas.

Ingredients

For 4 servings.

  • 800 g cauliflower
  • 2 can chickpeas
  • 1 can coconut milk
  • 2 tbsp curry powder
  • 300 g rice
  • 2 tbsp oil
  • 1 tsp salt
  • 1 tsp pepper

How to make it

  1. Break the cauliflower into florets.
  2. Heat the oil in a pot and fry the curry powder for 1 minute.
  3. Add the cauliflower, chickpeas and coconut milk and let it simmer for 15 minutes.
  4. Cook the rice in plenty of water as the packet says, typically 10-12 minutes.
  5. Season the curry with salt and pepper and spoon it over the rice.
