Lentil stew with coconut milk and spinach

A creamy, vegan stew with red lentils and coconut milk.

Ingredients

For 4 servings.

  • 600 ml water
  • 300 g red lentils
  • 1 can coconut milk
  • 200 g spinach
  • 300 g rice
  • 1 tsp salt
  • 1 tsp pepper

How to make it

  1. Rinse the lentils and boil them with the coconut milk and water for 15 minutes.
  2. Stir in the spinach for the last 3 minutes.
  3. Cook the rice in plenty of water as the packet says meanwhile, typically 10-12 minutes.
  4. Season with salt and pepper and spoon it over the rice.
