Chicken thighs in coconut milk

Thighs that turn tender in a pot of coconut milk. No sauce to stir — it makes itself.

Ingredients

For 4 servings.

  • 1000 g chicken thighs
  • 2 can coconut milk
  • 300 g carrots
  • 1 pcs onion
  • 30 g ghee
  • 2 tsp salt
  • 1 tsp pepper

How to make it

  1. Cut the carrots into slices and the onion into wedges.
  2. Brown the thighs in the ghee in a pot for 6-8 minutes, until the skin has colour.
  3. Add the onion and carrots and sweat for 3-4 minutes.
  4. Pour in the coconut milk and let it simmer with the lid on for 30-35 minutes, until the meat comes away from the bone.
  5. Season the coconut milk with salt and pepper and spoon it over the thighs.
