Chickpea stew with tomato and spinach
A Mediterranean-inspired stew with chickpeas and fresh vegetables.

Ingredients
For 4 servings.
- 1 pcs onion
- 2 can chickpeas
- 4 pcs tomato
- 150 g spinach
- 300 g rice
- 2 tbsp oil
- 1 tsp salt
- 1 tsp pepper
How to make it
- Chop the onion.
- Dice the tomatoes.
- Heat the oil in a pot and fry the onion for 4-5 minutes.
- Add the chickpeas and tomato and let it simmer for 15 minutes.
- Stir in the spinach for the last 3 minutes.
- Cook the rice in plenty of water as the packet says, typically 10-12 minutes.
- Season with salt and pepper and spoon it over the rice.
