Duck breast with grapes

Duck breast started in a cold pan, so the fat renders out and the skin turns crisp.

Ingredients

For 4 servings.

  • 600 g duck breast
  • 300 g grapes
  • 20 g butter
  • 2 tsp salt
  • 1 tsp pepper

How to make it

  1. Score the skin in a diamond pattern and rinse the grapes.
  2. Lay the breasts skin side down in a cold pan, turn on the heat and fry for 12-15 minutes, until the fat has rendered out.
  3. Turn them over and fry for another 4-5 minutes.
  4. Lift out the meat, add the grapes and butter to the pan and warm them through for 3-4 minutes, until they start to split.
  5. Season the meat with salt and pepper and let it rest for a moment.
  6. Slice the breasts and spoon the grapes and juices over.
