Fried rice with frikadeller and vegetables

Cold rice from yesterday works best — it does not clump when it hits the hot pan.

Ingredients

For 4 servings.

  • 400 g frikadeller
  • 400 g rice
  • 400 g broccoli
  • 300 g carrots
  • 1 pcs onion
  • 2 pcs eggs
  • 3 tbsp soy sauce
  • 1000 ml water
  • 2 tbsp oil
  • 1 tsp pepper

How to make it

  1. Break the broccoli into small florets, dice the carrots small, dice the onion and slice the frikadeller.
  2. Cook the rice in plenty of water as the packet says, typically 10-12 minutes, and let it cool.
  3. Heat the oil in a large pan and fry the carrots and broccoli for 6-8 minutes.
  4. Add the onion and frikadeller and fry them along for 3-4 minutes.
  5. Push it all to one side, crack the eggs into the pan and stir them together for 1-2 minutes.
  6. Turn in the rice and soy sauce, scatter pepper over and fry it all through for 2-3 minutes.
