Prawns and spinach in butter

Spinach wilted in butter, prawns folded in at the end. Ten minutes, and most of it is waiting.

Ingredients

For 4 servings.

  • 300 g prawns
  • 200 g spinach
  • 60 g butter
  • 400 g rice
  • 1 pcs lemon
  • 1000 ml water
  • 1 tsp salt
  • 1 tsp pepper

How to make it

  1. Halve the lemon.
  2. Cook the rice in plenty of water as the packet says, typically 10-12 minutes.
  3. Melt the butter in a pan and let the spinach wilt in it for 2-3 minutes.
  4. Fold in the prawns and let them warm through for 2-3 minutes.
  5. Squeeze the lemon over and season with salt and pepper.
  6. Divide the rice between the plates and spoon the prawns and spinach on top with all the butter.
