Prawns in creamy curry with rice
Broccoli boiled tender in a light curry sauce, and the prawns folded in at the very end, so they do not go rubbery.

Ingredients
For 4 servings.
- 300 g prawns
- 400 g broccoli
- 400 g rice
- 1 pcs onion
- 2 tbsp curry powder
- 200 ml cream
- 1000 ml water
- 2 tbsp oil
- 1 tsp salt
- 1 tsp pepper
How to make it
- Break the broccoli into small florets and chop the onion finely.
- Cook the rice in plenty of water as the packet says, typically 10-12 minutes.
- Heat the oil in a pot, sweat the onion for 3-4 minutes and stir in the curry powder.
- Add the broccoli, pour in the cream and let it simmer with the lid on for 8-10 minutes, until the florets are tender.
- Fold in the prawns and let them warm through for 2-3 minutes.
- Season the sauce with salt and pepper and spoon it over the rice.
