Chicken fricassée

Chicken and carrots boiled tender in cream and thickened at the end. It tastes of Sunday.

45 minutes in total — 15 minutes of preparation and 30 minutes on the hob or in the oven. Written for 4 servings.

Ingredients

For 4 servings.

  • 400 g chicken
  • 400 g carrots
  • 400 g rice
  • 200 ml cream
  • 20 g flour
  • 1000 ml water
  • 2 tbsp oil
  • 1 tsp salt
  • 1 tsp pepper

How to make it

  1. Cut the chicken into large pieces and the carrots into thick slices.
  2. Cook the rice in plenty of water as the packet says, typically 10-12 minutes.
  3. Heat the oil in a pot and brown the chicken for 5-6 minutes.
  4. Add the carrots, pour in the cream and let it simmer with the lid on for 12-15 minutes, until the carrots are tender.
  5. Stir the flour into a little cold water, pour it into the pot and let it cook through for 2-3 minutes, until it thickens.
  6. Season the fricassée with salt and pepper and spoon it over the rice.
