Moroccan chickpea stew with couscous

A spiced stew with chickpeas, tomato and couscous.

30 minutes in total — 10 minutes of preparation and 20 minutes on the hob or in the oven. Written for 4 servings.

Ingredients

For 4 servings.

  • 1 pcs onion
  • 2 can chickpeas
  • 4 pcs tomato
  • 2 tbsp curry powder
  • 250 g couscous
  • 2 tbsp oil
  • 1 tsp salt
  • 1 tsp pepper

How to make it

  1. Chop the onion.
  2. Dice the tomatoes.
  3. Heat the oil in a pot and fry the onion for 4-5 minutes.
  4. Add the chickpeas, tomato and curry powder and let it simmer for 15 minutes.
  5. Pour boiling water over the couscous — as much water as couscous — and let it stand for 5 minutes.
  6. Season with salt and pepper and spoon it over the couscous.
