Pasta with prawns and tomato

A tomato sauce with a bite of lemon, and the prawns folded in just before the pasta reaches the table.

Ingredients

For 4 servings.

  • 300 g prawns
  • 500 g pasta
  • 4 pcs tomato
  • 2 tbsp tomato purée
  • 2 pcs onion
  • 1 pcs lemon
  • 1000 ml water
  • 2 tbsp oil
  • 1 tsp salt
  • 1 tsp pepper

How to make it

  1. Dice the tomatoes and dice the onions, and halve the lemon.
  2. Cook the pasta in plenty of water as the packet says, typically 9-11 minutes.
  3. Heat the oil in a pan and sweat the onions for 5-6 minutes.
  4. Stir in the tomato purée, add the tomatoes and let the sauce simmer for 8-10 minutes.
  5. Fold in the prawns and let them warm through for 2 minutes.
  6. Squeeze the lemon over, season with salt and pepper and fold in the pasta.
