Vegetable stir-fry with tofu and rice noodles

A quick stir-fry with tofu and crisp vegetables, ready in under 30 minutes.

Ingredients

For 4 servings.

  • 400 g tofu
  • 300 g rice noodles
  • 400 g broccoli
  • 3 tbsp soy sauce
  • 2 tbsp oil
  • 1 tsp salt
  • 1 tsp pepper

How to make it

  1. Break the broccoli into smaller florets.
  2. Cook the rice noodles in plenty of water as the packet says, typically 4-5 minutes.
  3. Heat the oil in a wok or pan and fry the tofu for 6-8 minutes, until golden.
  4. Add the broccoli and fry on for 6-8 minutes, until the florets are tender with some bite.
  5. Pour in the soy sauce, season with salt and pepper and fold in the noodles.
